100% Vital from all 6 of COZs’ vineyards on Montejunto.
Pure limestone.
Two-day pre-fermentation maceration before fermentation in 1000L vats. Aged for 11 months in used barrels. Malolactic conversion completed naturally.

100% Vital from the Vinha de Pena vineyard, planted in 1982. 350m altitude with a Northwest exposure.
Altitude + exposure = cooler site = heaps of freshness.

Touriga Nacional, Arinto, Fernão Pires
Blanc de Noir Touriga Nacional with skins of Arinto and Fernão Pires.
8 months in a mixture of Amphora and Old Chesnut.
Further 1 year in old barriques.
Intense gastronomic orange with crazy salty freshness and acidity.

Dominó Foxtrot (Portalegre), 2023
Classic Palhete Field Blend of Red and Whites. 13 Varieties.
Dominó’s gateway drug to the world of Palhete. A super traditional field blend of 80-year-old vines of various Muscats, Reds and Whites.
Granite and clay soils.
Whole bunch macerated for five days, fermented in stainless, aged in old wood for 1 year.

Tiago Teles Gilda (Barriada), 2022
Baga, Alfrocheiro, Trincadeira
Alfrocheiro, Baga and Trincadeira from vineyards located 15 miles inland of the coast of the Atlantic Ocean.
Co-fermented with skin contact in open lagar for 10 days.
Elevage sees the wine spend 10 months in old 300-litre barrels.

Baga, Tinta Miúda, Castelão
The oldest vines planted by Antonio’s Grandfather in 1952.
First certified organic estate in Portugal (1977).
12 day open top ferment.
20 months in 600L very old barrels.
Further 3 years in bottle age before release.
A deep and velvety red with salinity and freshness.

Quinta Do Infantado Red, (Douro), 2020
Touriga Franca, Tinta Roriz & Touriga Nacional
A blend of Touriga Franca, Tinta Roriz, and Touriga Nacional from the Pousado vineyard, the newest addition to the Infantado stable.
Planted in 1998, specifically to be farmed organically and provide fruit with naturally high acidity, it was chosen for its high altitude, North/Northeast exposure and proximity to the moderating effects of the Covas River.
Grapes were partially de-stemmed before fermentation with native yeasts in lagar. Sees 8-month elevage in tank before spending 16 months in 300-litre french oak barrels, none of it new.
Unfined, unfiltered, small amount of sulphur (30ppm) added at bottling.

Quinta Do Infantado Roseira (Douro), 2015
Touriga Franca & Touriga Nacional
Touriga Nacional, Touriga Franca and a small amount of many more classic Douro varieties.
Their table wine equivalent to Vintage Port.
All Estate fruit from the families exclusively A-class vineyards.
Partly de-stemmed fruit is fermented with native yeasts in lagar.
Aged seven months in stainless steel tanks and then twenty months in 300-litre French oak barrels (with a portion of new oak).
